Gluten Free Pancakes Sweetened with Linah Farms' Medjools 😍

3 medjool dates
1 large ripe banana
1 egg
1/2 cup ground oats
1/4 cup almond flour (optional can be substituted for more oats)
1/4 tsp cinnamon
1/2 tsp baking powder
1/2 cup milk or milk alternative

Combine dates, banana, and egg in a food processor and process until smooth. Scrape into a bowl and add remaining ingredients. Mix and let sit to thicken for 15 minutes. Spoon 2 tablespoons at a time into a greased pan on low heat, flipping over once when browned and bubbles form.
