Ingredients:
Cheesecake Layer:
- 400g cream cheese
- 2/3 cup sugar
- 1/4 cup yogurt
- 2 tbsp heavy cream
- 1 tbsp cornstarch
- 2 eggs
- 2 tsp vanilla extract
- 1/4 tsp salt
Dates and Nuts Layer:
- 1 cup dates (12 dates)
- 3/4 cup pistachios
- 3/4 cup walnuts
- 2 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup sugar syrup*
Phyllo Layer:
- 1/2 cup butter, melted
- 1 package phyllo sheets
Sugar Syrup:
- 3/4 cup water
- 3/4 cup sugar
- 1/4 cup honey
- 1 teaspoon lemon juice
Directions:
- To make the sugar syrup, add the water, sugar, honey, and lemon juice in a pot over medium heat. Bring to a boil, then lower the heat and simmer for 10 minutes. Set aside and allow to cool.
- To prepare the dates and nut layer, add the dates, pistachios, walnuts, cinnamon, salt, and 1/4 cup of the sugar syrup in a food processor and pulse until crumbled.
- To make the cheesecake layer, add the cream cheese and sugar together and beat until creamy and smooth. Then add the yogurt, heavy cream, cornstarch, eggs, vanilla, and salt. Mix until smooth.
- To assemble, brush the bottom of the pan with butter. Add a layer of phyllo and brush with butter. Repeat this for a total of 10 layers. Then add the dates and nuts mixture to cover the phyllo. Pour the cheesecake filling on top, then add a phyllo layer and brush with butter. Repeat with 8 to 10 more phyllo layers and butter.
- Transfer to a preheated oven (180°C/ 350°F) for about 50 minutes or until the top turns golden.
- Once golden, take it out of the oven and pour the sugar syrup over the top.
- Let it cool to room temperature, then transfer to the fridge for at least 6 hours or preferably overnight before slicing and serving. Enjoy!
