Makrouta, originating from the northern regions of Palestine, is a beloved treat passed down through generations. Often prepared by women for special occasions, it represents the generosity and sense of community deeply ingrained in Palestinian kitchens.
Dough Ingredients:
- 3⅓ cups all-purpose flour
- 2 tablespoons sugar
- ½ cup melted butter
- ½ cup vegetable oil
- 1 tablespoon toasted nigella seeds
- 2 tablespoons toasted sesame seeds
- 1 tablespoon anise seeds
- 1 teaspoon baking powder
- ¾ cup water
- ¼ teaspoon salt
Date Filling Ingredients:
- 500g Gazelle Medjool dates, pitted
- 1 tablespoon cinnamon
- 2 tablespoons butter
- 1-2 tablespoons water (optional)
Directions:
-
Prepare the Dough:
In a large bowl, combine the dry ingredients (flour, sugar, nigella seeds, sesame seeds, anise seeds, baking powder, and salt). Gradually add the melted butter and vegetable oil, mixing as you go. Slowly add water while kneading the dough until it forms a soft and smooth consistency (it should not be sticky). -
Prepare the Date Filling:
Blend the Gazelle Medjool dates, cinnamon, and butter in a food processor until it forms a smooth paste. Add 1-2 tablespoons of water if needed for a more spreadable consistency. -
Assemble the Makrouta:
On a flat surface, roll out the dough into a thin rectangle. Spread a thin layer of the date filling across the dough, leaving a border around the edges. Carefully roll the dough into a log shape. -
Cut and Bake:
Slice the roll into smaller pieces and place them on a lined baking sheet. Bake in a preheated oven at 220°C for 10-15 minutes, placing the tray on the rack just above direct heat. Afterward, move the tray to the top rack for a few more minutes to achieve a golden finish. -
Serve:
Allow the Makrouta to cool before serving. Enjoy this delicious treat, perfect for family gatherings and special occasions.
